Keep in mind you don't have to tell your colonists when to sleep. Just set them to "anything" and they'll sleep when they're tired. Although I don't know if nightowls are smart enough to sleep in the daytime...

My guess what happened: the hit combined with existing injuries caused enough damage/movement penalty that the pawn was downed. Then the storyteller did the random roll to kill downed pawns immediately and he failed it.
Bleedout is something that can definitely happen but vanilla bleed rates from wounds are incredibly low and the total bleed rate is capped at 100%/day so it'll always take at least 24 hours before a pawn dies of blood loss, no matter how grievous the injury.
