According to http://rimworldwiki.com/Save_file save files under OS X are stored in

   ~/Library/Caches/unity.Ludeon Studios.RimWorld

I don’t think this is a safe place to store such data, as the Caches folder might be cleaned at any time.

Here’s some results from a quick google for "os x caches folder" that show people commonly delete the contents to save space:

The more standard location for save files would be something like

  ~/Library/Application Support/RimWorld/Saves

I just updated OS X to 10.9 on my Mac (I know, I'm behind the times), and it seems to have emptied this cache, taking all my saves with it. :(
