Just to throw out an answer as well, make sure your stockpiles in the fridge aren't set to take fertilized eggs, otherwise your colonists will be hauling them into the freezer killing the chicks.

This is actually a good way to control chicken population,
Kill the chicks without extra work and losing extra food :)
Maxim 1   : Pillage, then burn
Maxim 37 : There is no overkill. There is only open fire and reload.
Rule 34 of Rimworld :There is a mod for that.

It seems like many item stats, "egg progress" is averaged when you add to the stack. I just added a few eggs to a 36% egg stack and it became 25%. So if you keep adding eggs you're delaying the hatching.

You can micro a zone to critical til you get the stack size you want, then all the chickens hatch at once. I do it to control my flocks.

Even better, you can unruinbytemperature eggs by putting a healthy egg in a stack!
