In case anyone is interested, here is a chart of typical and maximum amount of time an organ can stay viable if kept chilled in preservation solution. Of course this means that, realistically speaking, it would be impossible to stock up on organs until a trader who sells them comes along as they would go bad too quickly even in the fridge. Unless you can stick them in a cryosleep pod.

Additionally you could always make organs from different sources be different items. A "cadaver kidney", vs. "living donor kidney", vs. "artificially grown kidney", or something of the sort.

You can always monitor the list of colonists at risk of death and harvest their parts ahead of time if you don't want to play "beat the clock" to avoid the Grim Reaper swallowing their prosthetics.
