I think adding in different Diet preferences such as vegetarian, vegan, or carnivorous might be an interesting. It would also require another level of depth by adding in "meal groups" or something to that affect where the group of colonists in meal group A would only eat the meals in stockpile 3 which are entirely made of meat. This could also come in handy when dealing with cannibals and creating a meal group for them which included human meat meals.

I think diet preferences would be a nice little addition for added complexity. I'm surprised that Vegetarian hasn't been added yet and I think Meat Eater would be nice addition if the colonist really resisted eating his veggies.

The cooking system would need to be tweaked considering at the moment both Fine and Lavish meals require a mixture of meat and vegetables (I can't recall how milk and eggs replaces it) but perhaps its a simple matter of upping the amount of raw food required to cook that meal to even it out.

So, a Lavish meal can be 10 meat and 10 vegetables/20 meat/20 vegetables.

I would say though that the negative moodlet if say a vegetarian was forced to eat meat or vice versa shouldn't be too high, at least not as high as a non-cannibal eating human meat.

I've already put forward a suggestion for dealing with his by introducing herbs/spices as a new food type that could be grown as crops and serve as seasonings to add to ingredients to make vegetarian or meat for meat lovers (with just the right seasonings), etc.:  https://ludeon.com/forums/index.php?topic=20107.0

Milk is in vegetables, animal products - jelly and eggs - are considered meat.

Preferences? Yes. Restrictions? No.

When you're starving you eat whatever you can find in order to survive. This is why cannibalism is a thing.

But honestly, I feel like this is going to be more micro than fun. A large colony would require 6-7 different meals in stock at all times.

Oh I fully agree, I think if there is the addition of a vegetarian trait it should be to add to the character rather than force you to micromanage each meal your colonists are having.

I think this could be implemented as new traits. So, there should be a small mood bonus for a vegetarian eating a meal with no meat (+5 max) and then if they have eat meat it should be a small negative moodlet (-5 max) than should really not stack or last very long. I think under the circumstances of RimWolrd, a vegetarian could see that its not wrong to kill an animal for the survival  of the colony and a meat eater like myself would certainly stomach a few vegetables so that they could make it too tomorrow.

Maybe even have skill bonuses attached. A vegetarian could be better at growing or animal handling while a meat lover could be a better hunter.

I dunno, if such a thing was to be implemented then that's how I see it being done.

Side Note - Chibiabos, I read that suggestion and I love it, I think the addition of spices would be a welcome addition to cooking.
