Q : What happens when a roof collapses?
A : A roof collapses when there isn't any support holding that roof.

Q : What happens when a roof falls on something?
A : If it is an item, it will take moderate damage. If it is a colonist, then they might get hurt, downed or even killed (depends where they got hit)

Q : How do "Overhead Mountain" roofs work?
A : If it collapses, on the place where it did, it will leave "Collapsed Rocks" Those work like a wall, preventing the Overhead Mountain from collapsing over and over and over.

Q : What happens when a Pawn is hit by the "Collapsed Rocks" ?
A : I haven't tested but it might work like the ordinary "Constructed Roof"

Feel free to update the QA post by telling me in the comments.

I think a 12x12 room is the largest you can make, with no extra support pillars, without the roof collapsing.

You can make a room as long as you want, so long as it's not more than 12 wide. Me, I just put up a support pillar, 'cause I've got this thing for building 17x17 blocks (15 internal space). Easy to split up into 6x6 rooms with hallways between.
