Unable to select members for caravan / assign food restrictions...

Hello
I'm having some issues with my newly purchased copy of RimWorld, running it without mods, but with the ideology and royalty expansions.

I can't seem to select options, eg for who to send in a caravan or what foods are allowed. The problem is that when I click the choice, it only changes for a nanosecond. It's harder to explain in words, so here's a low-quality video to explain what is going on:
