I think that maybe having food diversity wouldn't obligatorily mean heavy duty overkill cooking system. Maybe there is a way to concile this...

yes cannibalism is not a forced way of nurturing, it's just that people would feel better eating human food, or would have the idea to do so (as for bestiality: the human being is just another kind of beast)

Maybe not a whole saloon, because in the end of the day it is just another room, but maybe some kind of bar furniture to have your saloon (and the mandatory double saloon door with a *schlak schlak* noise when you go through it).

Or you can simply have your colonist disobay when their "moral" is not high enough, for example when they are missing sleeping time or feeding.

I think traits about nutritonal handicap like vegetarian/vegan, carnivorous and even (hardcore mode, please keep your children in leash) cannibal may be added to the current list.
