How do you enclose without making a building?

Sometimes I'm able to, others a roof comes up.  I have a big open area which is completely encircled by stone wall (including doors) in front of my cave.  But when I try to do the same thing around solar panels to keep fire away, it encloses it. 

I'm not sure (and I'll try to figure it out and post my results), but I think that if you have a slight break in a straight wall, it keeps it open.  For example:

XXXXXXXXXXX
.....................XXXXXXXXXXXX

Where the walls are straight but not completely attached.  I've tried doing it purposely by creating a diagonal wall, but it encloses.

i think you should use the remove roof tool(it's under zones)
