For comparison example, you can always "Harvest" Lungs, but if there is something wrong with them, you get another option too, titled "Remove". (( This is correct. ))

But in this case, you cannot "Harvest" Eyes, but if there is something wrong with them, you get a different option, titled "Amputate".

Just a minor English language nitpick, but I think Eyes should use verbiage "Remove" instead of "Amputate". I think "Amputate" is just for limbs?

Technically, (to) amputate is to cut off, typically via surgical operation.
Usually this is used in reference to the removal of part or all of limbs or digits, yes.

Replacements for the "amputation" of (an) eye(s):

Evicerate; if the outer surface of the eye is left intact.
(Do not use as replacement for amputate, as this is never used for the removal of cancer or malignant tumors.)

Enucleate; Removal of the eyeball, but leaving the muscles, nerves, and bones of the orbit in place.
(Used for removal of some cancers. Good alternative to amputate for RimWorld purposes as it leaves the optic nerve in place for RimWorld bionic eyes to be grafted onto.)

Exenterate; Removal of the eyeball and all bones, muscles, and nerves within the socket, often used if eye-based cancer has spread from the eye to surrounding tissue.
(Should be avoided for RimWorld purposes as this removes the possibility of RimWorld bionic eye grafting. In addition, if a tumor or cancer is bad enough to require this surgery in RimWorld, chances are that the patient has already died anyways.)

Enucleate/Enucleation is probably the best replacement for "amputate" for an eyeball as it removes the eyeball, is used to remove cancer or malignant tumors, and leaves the optic nerve intact.
(The last point is very important for RimWorld purposes.)
