As of now you cannot make anything but the wooden parts. Will Tynan change that? No clue. Will modders change that? Most likely.

You can get advanced prosthetic parts from other sources.

I haven't had time to play yet but one would think you could harvest them from prisoners.  Maybe dead bodies?

You can harvest organs.  I don't think you can harvest limbs.  But you can buy them, as Tynan pointed out.
