Check the image:

I don't understand how it is possible that my colonist thinks that, that room is ugly. It has beautiful wooden floors and plant pots.

Rock bed walls?

I doubt that. Whenever I have built a cave base before that have never been an issue.

What floor is under the paste dispenser?

thinking about it, does that even make a difference?

Its a stacking process, like corpses thoughs, you get extra fear per corpses, same is with envoirmental beauty but its slower, so more often that not while your colonist is moving even thrugh a garden of roses he wont get much more than nice envoirment, becouse its so slow to stack. But if you for example draf him and let him wait for 5 sec you will that it will stack up to some decent level.
Envoirmental beauty takes each pice of furniture and adds it to a cout as 1x(beauty lvl of a furniture) point, each patch of dirts/bloods is -0.3 point ( dirt have stacks to ).
All i do is clutter all around.

I agree that it probably wont change much, originally the whole flooring of that room was smooth stone, what is under the paste dispenser is still smooth stone since you are not able to places floors more than one block away.
