Game loads in a different resolution than displayed in Settings

Whenever I open up the game, it loads in an odd resolution that results in a lot of buttons and popups hanging slightly off the bottom and the top of the screen. When I go into Options, it initially says that the resolution is set at 1280x720, which is what I normally use. However, when I go to change it, there is no option for 1280x720 in the drop-down - the closest is 1280x768, which is what I believe the game is actually using, resulting in things going off the top and bottom edges of the screen. When I select this option (or any option larger than it), it displays the resolution as 1280x720.

This bug isn't gamebreaking, but it's really annoying and really odd. Why on earth is this happening?

First reason came in my mind, the config folder or files are write protected so the change you made don't get safed.
Does other gameprefs settings get safed like sound/music volume, windowed/fullscreen ?
If that don't be, please provide some more information.
Rimworld version, What OS do you use.
A logfile maybe it show a reason why Rimworld can't safe/change the settings.

Other game settings seem to work just fine.

I'm running RimWorld version 1.0.2096 on Windows 10 Pro. Probably also worth mentioning that I have RimWorld through Steam, so I can't view all of the files (I think). I've also attached a copy of the output log.
