Traditional Finnish drying methods would take place in the winter, so the cold and dry air would serve to dry out the meat, while keeping smells down. They would just string up strips of meat on the outside of their cabins and leave it there over the winter.

I think many of us are in the same boat.  We're like puppies following Tynan around the kitchen waggling our tails eagerly hoping he gives us something or at least 'accidentally' drops something tasty on the floor for us.
